Fruit Smoothie

I love Weight Watchers so much! It helped me change my life, gain confidence, and become a more active person.

But, I do not always agree with everything it recommends. Like the fact that they encourage people to get sugar free, reduced fat, or fat free of things (do you know how many more chemicals need to be added for those products?!?)

I also don't agree with the fact that they want us to count smoothies as points. I'm going to have my fruit the way I want my fruit and I'm going to count it as 0 points gosh darn it!

This delicious baby was made with strawberries, banana, pineapple, 1/4 cup plain greek yogurt, 1/2 cup skim milk and 1/2 cup water.

All free on Simply Filling!

Turkey Taco Salad

I love recipes that you can just whip together. This salad is just that.

1) Cook turkey meat with taco seasoning
2) Make salad with lettuce, corn tomato & taco meat
3) Top with any additional toppings: Black beans, pico de gallo, green salsa, avocado, or tortilla chips

Enjoy!

PB & Banana

I went to bed last night thinking about peanut butter and bananas. I think I dreamed about peanut butter and bananas while I was sleeping.

This is one of the easiest breakfasts for people on the go:
Step 1: Toast an english muffin
Step 2: Slather on peanut butter
Step 3: Add sliced banana

You can even turn it into a sandwich and eat it as you're running out of the house or driving in the car.

Myself personally, I like it right when the english muffin gets out of the toaster and you put the peanut butter on and it gets all melty. It's like heaven in your mouth.

If you use light english muffins you only have to count this for the peanut butter. My peanut butter I like is 3 points for a tbsp.

Zoo Lunch

Last week I went to the local zoo for a lunch. I wasn't sure what would be served so I brought my favorite 0 point snacks on simply filling:

Iced coffee with skim milk = 0 points

Grapes = 0 points

Smart Pop popcorn = 0 points

When I got to the lunch I made the best choices possible. I would say everything on this plate was free except the cheese on the burger (4 points) and the Italian dressing on the salad (2 points).

I would have done great if I didn't see the ice cream.. It's kind of hard to pass up free ice cream! Luckily my mom split it with me so it was half of what I could have ate.

Stuffed Peppers and Mashed Potatoes

This was my first recipe I made on simply filling. It was so good and all came from me getting in the kitchen and adding a little of this and a little of that. I posted it on Instagram and people asked me for the recipe so I just had to rack my brain and remember everything I did.

The peppers are made with turkey and the potatoes are mixed with cauliflower so it is a pretty guilt free meal.

Everything in this whole meal is free on simply filling. That's why I love it so much!

Ingredients for Stuffed Peppers:
1/2 tbsp olive oil
1/2 cup chopped yellow onion
3/4 pound ground turkey
Salt, Pepper, Oregano, & Garlic Powder
1 tbsp tomato paste
1 (14.5 oz) can of diced tomatoes
1 cup cooked brown rice
2 green peppers, cut in half and seeded

1) Saute chopped onion and olive oil in a pan. When the onion is translucent add the turkey and cook until browned.

2) When turkey is browned add in all the seasonings, tomato paste and diced tomatoes. Stir well and cook for about 5 minutes. Add brown rice and remove from heat.

3) Dived the meat mixture between all four pepper pieces and put in a 9x9 pan. Cover with aluminum foil and bake at 350 degrees for about 30-45 minutes.

Ingredients for Mashed Potatoes:
3 small red potatoes, chopped
1/2 bag Trader Joe's cauliflower rice
Skim milk
Butter (optional- will add smart points)

1) Cook red potatoes in a pot of boiled water. When the potatoes are soft, drain and mix in the cauliflower rice.

2) Add in skim milk and butter (optional) and use a hand mixer or an immersion blender to smooth into lump free mashed potatoes.
